Black cuttlefish

• 300g homegrown fresh cuttlefish cut into lozenges (clean and store apart its black)
• 150g vegetal broth
• A glass of white wine
• 1 tablespoon of tomato paste and 100g of sauce
• ½ onion, finely chopped
• 2 garlic cloves
• 2 bay leaves
• Oil, salt, pepper
• 1 lemon
Cook the onion and the garlic with olive oil in a large pan. Add the cuttlefish and the bay, then deglaze with the white wine. Add the broth, the tomato sauce and paste and the black.
Cook slowly for 50 minutes. Adjust with salt and pepper and present it on a plate with some grated lemon zest. Serve with white polenta.
